vegan stuffed jalapeño poppers

The ultimate party food. Easy to whip up and can easily modify to your likings (e.g. choose a different cream cheese or cheese that you like more)! Not too spicy but full of flavor. Your carnivore friend would even love these. Yes, they are that good. Give them a try & tell me if you agree (pssst- I already know you will)!

Makes 20 poppers

Ingredients:

  • 1 package (8 oz.) Beyond Meat Burgers (plant based burger patties)

  • 10 large jalapeños

  • 6 ounces vegan cream cheese (I used and recommend Miyoko Classic Double Cream Chive cheese wheel!)

  • 6 tablespoons of vegan shredded cheese (I used and recommend So Delicious Cheddar Jack shredded cheese)

  • ¼ cup sliced scallions (+ more for garnish)

  • ½ teaspoon cumin

  • 1 teaspoon garlic powder

  • Chopped cilantro for garnish (optional)

Directions:

  1. Preheat oven to 350 degrees.

  2. Heat skillet over medium to high heat with a small amount of oil or spray. Add the Beyond Meat burgers and cook until browned (about 3 minutes each side; follow package directions), crumbling them with spatula as they cook. Remove from heat and allow to cool.

  3. Cut jalapeños in half lengthwise. Scoop out and remove seeds.

  4. In a bowl, mix the cheese, scallions, cumin and garlic powder together. Stir in about 2/3 of the Beyond Meat burger crumbles from the skillet.

  5. Stuff each pepper half with a tablespoon of the filling. Arrange the stuffed peppers on a sheet pan lined with parchment. Sprinkle the remaining Beyond Meat burger crumbles and shredded cheese on top of the peppers.

  6. Bake in oven for about 20 minutes, or until jalapeños are cooked through and cheese is melted. Garnish with cilantro and more scallions. Enjoy!
