tofu scramble tacos

Ingredients:

1 block tofu, drained

2 tbsp. nutritional yeast

½ to 1 tsp. turmeric

½ to 1 tsp. garlic

1 tsp. onion powder
Optional:
-
Other spices such as cumin, paprika, taco seasoning

Toppings for taco: avocado, sautéed vegetables, cilantro, hot sauce, tomato, etc.!
Directions:

Completely drain your tofu (I cover mine in paper towels and place books on top of the covered tofu for about 20 minutes to drain out the water!).

Once drained, crumble the tofu with your hands (can also use a fork) into a mixing bowl.

Add in the nutritional yeast, turmeric, garlic and onion powder. Stir together until evenly coated.

Transfer the “scrambled” tofu to skillet and cook on medium-high heat for ~5 minutes or until flavor has been absorbed.

Place the scrambled tofu on your favorite tortilla (I am biased to Siete Cashew Flour Tortillas!) and add all your favorite toppings!
