peanut butter and jelly smoothie bowl

This smoothie bowl recipe will probably go down as my favorite smoothie recipe ever. It’s probably due to the fact that drinking this smoothie takes me back to my childhood and who doesn’t love that? This smoothie bowl is made with staple ingredients so it’s easy to whip up at any time of the day! I do recommend using full fat coconut milk (versus low fat) to get the most flavor, and nutrients!

Ingredients:

  • 1.5 cups frozen strawberries

  • 1 small frozen banana (or 1 cup equivalent)

  • 1/4 cups GF oats

  • 1/4 cup full fat coconut milk

  • 1 tbsp. ground flax/chia seeds (I use a 50/50 mixture)

  • 1 tbsp. raw honey

  • 2 tbsp. peanut butter (or nut butter of choice)

  • 1 cup unsweetened plant based milk

Directions:

  1. Add the ingredients to a high-speed blender. Blend until smooth and desired thickness.

  2. Pour into bowl and add your favorite toppings!

  3. Enjoy immediately.

Optional:

  • 1 cup frozen cauliflower florets (great way to add a serving of vegetables!)

  • Ice cubes (for a more desired thickness)

  • Topping Favorites: granola, strawberries, goji berries, sliced banana, crushes nuts, chia/flax/hemp seeds, and drizzled peanut butter!
