oven roasted cabbage steaks

This might be my go-to vegetable dish. It’s easy. It’s cheap. It’s delicious. Boom. I know cauliflower steaks get a lot of attention (rightfully so!) but cabbage steaks definitely deserve a spot at the dinner table too.
Ingredients:

1 Medium Head of Cabbage, remove outer loose leaves and rinse

Cut into 1/2 to 1 inch thick rounds

2 tbsp. Avocado Oil (or high quality Extra Virgin Olive Oil)
To Season:

Garlic, Minced

½ Onion, Finely diced

Salt and Pepper

Trader’s Joe’s Everything but the Bagel Seasoning
Directions:

Preheat oven to 400 degrees.

Brush both sides of cabbage steaks with 1-2 tbsp. avocado oil

Place cabbage steaks on baking sheet.

Season to taste with garlic/onion/salt and pepper OR Trader Joe’s Everything but the Bagel Seasoning.

Bake for +20-30 minutes, or until crisp to preference (I like mine extra crispy!
Why Avocado Oil?

Avocado Oil has a high smoke point of ~500 degrees Fahrenheit. This means it can withstand high temperature cooking without breaking down the nutritional value and the chemical structure of the oil.

To compare, Extra Virgin Olive Oil (the Olive Oil that I recommend as it is the highest quality and least processed) has a smoke point of ~300-400 degrees Fahrenheit, depending on the quality. Rule of thumb: the better quality of EVOO, the higher the smoke point.
