green smoothie

This green smoothie is one of my go-to smoothies in the morning. It’s quick, easy, full of nutrients, and most importantly flavor! You can prepare the ingredients the night before so that in the morning all you have to do is drop it in the blender. The banana and peanut butter (or nut butter of choice) will mask the cauliflower and spinach so although it looks green, it tastes like a peanut butter banana smoothie!

Ingredients:

  • 2 cups of raw spinach

  • 1 frozen banana (~1 cup equivalent)

  • 1 cup unsweetened plant based milk (I like cashew or almond)

  • 2 tbsp. peanut butter (or almond butter if preferred)

  • 1 tsp. cinnamon

  • ½ to 1 cup frozen cauliflower

  • ½ cup ice (plus more if using a raw banana)

  • Optional:

    • 1 scoop plant-based protein powder (or grass fed whey if preferred)

    • 1 tsp. Vanilla extract (alcohol free)

    • Raw local honey/1 pitted date (for more sweetness)

Directions:

  1. Combine all the ingredients in a high speed blender. Blend until desired texture; thick and creamy is my preference!

Notes:

  • If you want it thicker, add more ice and less liquid!

  • If you want it thinner, less ice and more liquid!
