crispy baked chickpeas

Allow me to introduce to you one of my all-time favorite snacks. I am always looking for that crunch texture and these do the trick. They are great for a go-to snack but also make a good salad topper for a crouton-like crunch.

  • 1 (15 ounce) can chickpeas (garbanzo beans), drained and rinsed

  • 1 tbsp. avocado oil (or high quality extra virgin oil)

  • Salt and pepper to taste

  • 2-3 tsp. spices of finely chopped herbs of choice

    • Chili powder

    • Curry powder

    • Paprika

    • Cayenne pepper

    • Garlic

    • Cumin

    • Rosemary

    • Thyme

    • Coriander

    • *Spices used in this recipe: chili powder, paprika, cayenne pepper, garlic

  1. Heat oven to 400 degrees F.

  2. Completely dry chickpeas with paper towel. Let air dry if possible.

  3. Toss chickpeas with oil of choice (avocado/olive oil) and salt/pepper.

  4. Spread chickpeas out in an even layer on rimmed baking sheet.

  5. Roast chickpeas for 35-40 minutes or until golden brown and crispy to the touch.

  6. Toss chickpeas with the spices of choice while still warm & enjoy!
