crispy baked chickpeas

Allow me to introduce to you one of my all-time favorite snacks. I am always looking for that crunch texture and these do the trick. They are great for a go-to snack but also make a good salad topper for a crouton-like crunch.
Ingredients:

1 (15 ounce) can chickpeas (garbanzo beans), drained and rinsed

1 tbsp. avocado oil (or high quality extra virgin oil)

Salt and pepper to taste

2-3 tsp. spices of finely chopped herbs of choice
-
Chili powder
-
Curry powder
-
Paprika
-
Cayenne pepper
-
Garlic
-
Cumin
-
Rosemary
-
Thyme
-
Coriander
-
*Spices used in this recipe: chili powder, paprika, cayenne pepper, garlic

Directions:

Heat oven to 400 degrees F.

Completely dry chickpeas with paper towel. Let air dry if possible.

Toss chickpeas with oil of choice (avocado/olive oil) and salt/pepper.

Spread chickpeas out in an even layer on rimmed baking sheet.

Roast chickpeas for 35-40 minutes or until golden brown and crispy to the touch.

Toss chickpeas with the spices of choice while still warm & enjoy!
