avocado toast 101

If there is one thing I am probably known for in the food world, it would have to be my love for avocados. They are truly my favorite. I probably eat avocado daily (if they are available) and my favorite way to eat it is on toast. This probably isn’t considered a “recipe” but that’s ok, I am going to include it. I love avocados so much that I once had an avocado painted on my nail to showcase my love. Yes, it’s that deep. Avocados are so so good for you- excellent in healthy fats (primarily monounsaturated fats which has been shown to help protect against heart disease), naturally sugar free, and a good source of fiber. Also, did you know that avocados have more potassium than bananas? Anywho, avocado toast is a quick thing to prepare for breakfast, lunch or really at any point you desire. The best part of avocado toast, it is so flexible. You add whatever toppings you wish! Below is an avocado toast 101 guide:
 

Serves: 1
 

Ingredients:
 

  • ½ ripe avocado, peeled, mashed

    • Take ½ avocado, scoop out of peel and place in bowl. Mash up with fork until smooth or until desired consistency.

  • 1 slice bread of choice (e.g. whole grain, Ezekiel, gluten free, etc.)
     

Topping Suggestions:
 

  • 2 slices beefsteak or heirloom tomato

  • 1 Egg, cooked, Sunny Side Up/Poached/Soft Boiled/Scrambled

  • Extra Virgin Olive Oil (EVOO)

  • Microgreens

  • Crushed red pepper flakes - optional

  • Pink Himalayan salt (or salt of choice) + Pepper - optional

  • Trader Joe’s Everything But the Bagel Seasoning – optional

  • Sriracha (for all my spicy lovers!)
     

Avocado toast with Egg
 

Directions:
 

  1. Toast 1 slice bread of choice. Spread mashed avocado on toast.

  2. On skillet, cook 1 egg as desired (sunny side up/poached/scrambled/etc.).

  3. Add cooked egg onto avocado toast.

  4. Top with seasonings of choice: drizzled EVOO, salt, pepper, Everything but the Bagel seasoning, crushed red pepper flakes). Add sriracha for a kick if desired or microgreens for a great touch of greens and micronutrients!
     

Avocado toast with Heirloom Tomato
 

Directions:
 

  1. Toast 1 slice bread of choice. Spread mashed avocado on toast.

  2. Add 2 slices heirloom tomato onto avocado toast.

  3. Top with seasonings of choice: drizzled EVOO, salt, pepper, Everything but the Bagel seasoning, crushed red pepper flakes). Add sriracha for a kick if desired.

  4. For a great addition, add microgreens of choice!
